Buttermilk puddings with Passionfruit syrup

 

Ingredients For puddings

2 tsp gelatine

1 cup buttermilk

1 ¾ cups cream

¼ cup sugar

 

Ingredients for syrup

¼ cup sugar

1/3 cup water

1/3 cup Passionfruit pulp

 

Directions

For syrup, place the sugar and water in a small saucepan over a low heat and stir, brushing down the sides of the saucepan until the sugar is dissolved. Stir through the Passionfruit pulp and set aside.

 

For puddings, soften the gelatine in 2 tblsp of the buttermilk and set aside. Heat remaining buttermilk, cream and sugar in a small saucepan over low heat and stir until the sugar is dissolved. Stir through gelatine mixture. Pour into 6 separate ½ cup moulds and refrigerate for 2 hours or until set. Turn out and serve with the Passionfruit syrup.
