Lemon and Passionfruit slice

 

Ingredients

 

Base

2 cups each of self raising flour, desiccated coconut.

1 Cup caster sugar

250 g butter, melted

 

Topping

395g cam sweetened condensed milk

1/2 cup lemon juice

1/4 cup passion fruit pulp

 

Method

 

Preheat oven to 180deg c, lightly grease and line a 30cm x 20cm slice pan, sift flour into a bowl, stir in coconut and sugar. Make a well in the centre of the dry ingredients, stir in melted butter. Press base mixture firmly and evenly into slice pan. Bake base for 12 to 15 minutes until lightly golden. Remove from oven.

Meanwhile, combine the condensed milk, lemon juice and passion fruit pulp in a bowl. Pour the topping over the base and bake slice for a further 10 mins. Cool then chill overnight.
