500g pasionfruit pulp
500g apples
250g onions
2 cups malt vinegar
4 cups brown sugar
1 teaspoon mace
1 teaspoon ground allspice
1/2 teaspoon groundblack pepper
1 tablespoon salt
1/4 teaspoon cayenne pepper
Place the passionfruit pulp in a saucepan. Chop the unpeeled apples and peeled onions and add to the saucepan. Stir in the vinegar, bring to the boil and cook, partially covered for 15 minutes.
Add the remaining ingredients and continue cooking, partially covered, for 30 minutes.
Allow sauce to cool, then pour into clean bottles and seal.
Makes about 1.5 litres
